This is a fun light meal since it feels like a snack, but is loaded with healthy fats that fill you up. Extra virgin coconut oil has a coconut flavor that isn’t always appreciated but I like to use it when making popcorn – it’s a good way to sneak in extra nutrition and it tastes great!
Green Popcorn
- 1/4 c. popcorn
- 2 T. coconut oil
- 1 T. vegetable broth
- 1 t. spirulina
- 1/4 c. shredded cheese
- 2 – 4 T. melted butter
Pop the popcorn in coconut oil. Mix the remaining ingredients, and stir into the popcorn. I’ve only made this once, so there’s probably a better way to mix this al up, but this worked for today.

Was the popcorn soggy with all the add-ins? Did the kids eat it? Green could be cool or too gross for words — if you know what I mean 🙂
It wasn’t soggy, but I left out the broth (because I forgot it, not because I meant to). The spirulina didn’t stick as well as it would have with the broth, and next time I’ll pay more attention when I’m making it so that I put in all the ingredients! The green in this case made it fun – they watched me mix it in, so it wasn’t like I brought it to the table and they had no idea what it was.
